What To Look For When Choosing Fresh Fish

With the festive season right on our doorsteps and summer being well and truly upon us, most people will be stocking up their pantries and contemplating their Christmas lunch so we have put together our top tips on choosing the freshest fish:


The fresh fish tests

The first test is Smell - If the fish you have selected has a heavy fish smell chances are its a few days old, fresh fish should have a slight fish smell or even better an ocean smell.

The second test is the eyes - Its all in the eyes, fresh fish has clear eyes whereas if the fish has cloudy or white eyes, the quality of the fish will probably  be poor.

The third test the touch test - Fresh fish will be firm to touch, this indicates freshness and quality so avoid soft flesh as this will only disappoint.


How to store fish

You should always eat fish soon after buying however if you want to store your fish we will tell you how:

Wrap each fillet in some paper towel, then wrap each fillet in some cling wrap and store for later in your refrigerator.

The paper towel will absorb all the moisture from the fish , this will prevent the flesh from soaking in water and becoming soft.



 
Tiger Prawn, Leek and Spinach Linguine

Before you make any Seafood dish always make sure you use only the freshest Fish and the Best Seafood available.


What you need!

1kg Raw Tiger Prawns, peeled and cut into chunks (You can use any prawns available but we feel Tiger Prawns work best)

3 Tablespoons Olive Oil

1 Tablespoon Lemon Rind

2 Leeks Cut Into Strips

200ml Tomato puree

150g Baby Spinach Leaves


What now?

Cook the linguine in a saucepan of rapidly boiling salted water until 'al dente'.

While the pasta is cooking heat the olive oil in a pan and gently cook the leek until golden.

Add the prawns and stir till the flesh just becomes firm, about two minutes.

Stir in the Tomato puree and continue to cook for a further two minutes.

Add the Lemon rind and the spinach and toss over the heat till the spinach has wilted.

Drain the linguine and add to a large serving bowl toss with the prawn mixture and season to taste.


Serve with a fresh garden salad.

Today we are giving out a an old recipe, and oldie but a Goody. Make sure you use only the Best Fish and the Best Seafood for it.

Lemon Cream Salmon

In this receipe Salmon gets cosy in a velvety-smooth sauce with fresh bursts of lemon.

What you need!

Water - 3L

Salt - 1 1/2 tsp

Spaghettini - 340g

Cooking oil - 1 tsp

Finely Chopped Onion - 1/2 cup

Garlic Cloves, minced - 1/2 tsp

Plain Flour - 2 tbsp

Liquid chicken Stock - 1 cup

Unthickened Cream - 1 1/2 cups

Salt - 1/2 tsp

Pepper - 1/4 tsp

Fresh Salmon (removed skins) fillets cut into 1/4 inch slices - 454 g

Chopped fresh parsley - 1 tbsp

Grated Lemon Zest - 1 tbsp


What now?

Combine water and salt in a large pot. Bring to the boil. Add pasta. Boil, uncovered, for 9 to 11 minutes, stirring occasionally, until tender but. Drain. Return to same pot. Cover to keep warm.


Heat cooking oil in large frying pan on medium. Add onion and garlic. Cook for 5 mins, stir often, until onion is softened.


Add flour. Heat and stir for 1 minute. Slowly add stock, stirring constantly until boiling and thickened. Add next 3 ingredients. Stir


Add salmon. Simmer for 3 - 5 minutes, stirring occasionally, until salmon flakes easily when tested with a fork. Add to pasta


Sprinkle with parsley and lemon zest. Toss gently to combine. Makes about 7 cups.
